『剁椒魚頭』真得超級簡單又好吃喔!皮皮一直督促我要寫下作法,免得以後忘記。
做法:
準備工作:將魚頭洗淨,切成兩半(骨頭很難切對半,所以盡量就好)。浸泡米酒+鹽約十分鐘。蔥切碎,薑塊切末,蒜剁細末。
蒸鍋裡頭先加好水,可先將水煮沸。(我沒有)
魚頭放到盤子裡擺好,在魚頭上撒上薑末,蒜末,再塗上厚厚一層辣豆瓣醬。
整個盤子放到蒸鍋裡頭,開始蒸。一開始大火,幾分鐘之後看到很多蒸汽冒出,轉中火。
蒸熟後,熄火,再撒上蔥末,繼續悶一下。
等其他的菜都好了之後便可上桌囉!
It was a success!! In the beginning when I was preparing for it, Pipi was not to excited. "Because it's 魚頭 = fish with bones. You know I am like Americans who don't fish with bones.".... After tasting it, "It's the best 魚頭 among those few times I tried."...... I hope he meant it. At least he learned to praise whatever I cook now. He knows that I need some encouragement to keep going and I do feel that being a 家庭『煮』婦 is not bad!
